Hi Saul, this use case is definitely possible using the 'Custom HTTP action' of our Google Drive Connector. I've created a recipe which shows this use case at https://www.workato.com/recipes/617638-make-copy-of-file-on-gdrive#recipe. In order to get this recipe working you'll need to do the following:
Create a Google Docs that will act as the template
Create a Custom HTTP action in your recipe like in the image below. Within the path field, ensure the format matches 'files/fileId/copy' where fileId should be exactly the same as the fileId you got from the previous step.
If you'd like to control the name that Google Drive gives to the newly created Google Doc, simply specify the 'name' parameter in the Request body parameters section like in the image below.

Duplicating an existing Google Doc
I have a use case where I am able to make a copy of an existing google document (which serves as a template) on a regular schedule.
I can see an action to create a folder but not a file. An action either to create a new file or make a copy of an existing file will suffice. This seems is supported by Zapier but not Workato (see https://zapier.com/zapbook/zaps/2090/automatically-create-a-google-docs-document-every-week/)
